As far as I know that bioactive compounds denaturation or degradation is basically depends on specific plants habitat or stress tolerance capacity. And definitely depends on the compounds biochemical parameters. Is there any other reasons? Please share your views.

Generally natural products are not heated at temperatures above 30-35 °C.
It is very specific to indicate denaturation temperature of above mentioned individual compounds. In the plant they may be stable up to certain degrees because of their intermolecular complexes, but in the individual form they will be easily degraded even in low temperatures.

As said by some colleagues above my answer, it depends mostly if it's in a complex matrix or if it's alone in solution.
Generally I never heat them above 40°C.
Others parameters could be the pH of the solution (if in water solution), or the time you heat them (I observe degradation of some extracts in EtOH 30% solution after 1h of extraction without heating).
Degradation could also be the light, the oxygen in the air, the solvent you choose (DMSO sometimes is not a good option...), so it's difficult to highlight one and only factor.
For good preservation, I use amber flask under argon or nitrogen at -25°C. Generally it's fine with this !

The degradation of bioactive molecules by temperature depends primarily on their chemical nature. Generally, polar molecules more resistant to temperatures that non polar molecules.

High temperature increase the chance of oxidation of phenolics which decrease the yield of phenolics in the extracts. For example, conventional extraction and concentration of anthocyanins is typically conducted at temperatures ranging from 20 to 50°C, because temperatures > 70°C have been shown to cause rapid anthocyanin degradation .
