1) using WPF or Windows forms in .NET create a task scheduler by inputting the day of the month
2) Client and server (request/response) architecture.Use ASP.NET webservices. Create online book/hotel/airline portal. Allow discussion forums, voting, downloads etc.
3) Your university website downloader and parser. Create a database structure of web elements and recreate the website using templates. Use Windows forms in .NET

I would suggest for some Content Management Systems as well eg: Drupal, Joomla etc
I agree with Reza's suggestions. you can develop a web application, like personal or educational scheduler . i think this is a good idea for academic projects.
You can work on web semantic information retrieval using ontolgies

Mahmood, I suggest that you take a look at what LINKED DATA is. You may apply this technology to simple entities in a context of your choice.
