I would recommend Thomas Rudel from Rutgers University. His background is in environmental sociology and public policy as well as urban planning and social policy. His book Tropical Deforestation is a pretty solid read through the processes and patterns of development associated with deforestation in the Ecuadorian Amazon - just a recommendation of one his works. If you research him I believe that will open you up in multiple directions to what you are looking for.

Hi! The wide array of topics that could be coverd by environmental sociology is huge. Looking at the interaction between humans and with non-human being, ecosystems, etc. have been largely been explored. One topic of significant importance is illegal poaching, illicit markets. This overlaps with green criminology scholards. Here you could find several works from Vanda Felbab-Brown (see The Extinction Market), Tanya Watts on wildlife trafficking, etc. With the renewable transition, you could check the 'socioecological fix' theory from McCarthy. This is very useful to inquiry how the renewable transition is not necessarily going to mean the end of the regime of cheap energy. Having said this I would suggest you to check Raj Patel and Jason Moore works on the world-ecology. Each author is very prolific and it won't be difficult to find their major works.
