          Your question is not clear, but as per my understanding of your question, you can load the ground truth of pavia dataset in matlab and can see the location of each class

 i want to know how classes are define in the hyperspectral dataset (pavia centre scene).

Take the example of water class, at what range of pixel values belongs to water class. Same for other classes.

In Ground Truth image, it is given that which pixel belongs to which class. For instance, in Pavia University dataset there are 9 different classes defined in ground truth with clearly mentioned about their boundaries. Attached gigure may help you.

Thanks for answer. But i want to know in the hyperspectral cube how they define the class. Which parameter is use to define these classes. What is the range of the values of the pixels for each classesare defined.
