Peter Ladefoged's book "A Course in Phonetics" is a classic. Anything out of MIT is excellent...Search on MIT Press Phonology. You will find both books and monograph length papers.

There are quite a few books and articles that deal with rhythm in both spoken English and English poetry (which are two seperate entities and must not be confused!). David Abercrombie wrote about the subject, so you can Google some of his writings like:
