This is because you have to modify the dimensions in order to exactly get the 2.5GHz frequency.
The result you are getting most probably due to wrong simulation setup.
For HFSS I would highly recommend you to use proper simulation setup, which is different for wave port and lumped port. Please let me know what type of port are you using. I might be able to guide you. Regards.
If it is a microstrip co planar or planar antenna, I suggest you use lumped port, this will give you the desired result. remember to put your geometry at the middle of the radiation boundary. Do not let any part of the geometry touch the radiation boundary. Enlarge the radiation boundary at least 1 lembda at all the sides.
For the wave port, keep your geometry touched at any one side of the radiation boundary. The touching side of the geometry should have the wave port.
I prefer lumped port by the way. If any question, do not hesitate to ask.
If you can mention the three bands you got, it is easy to identify the problem. This may be due to resonance in higher order modes or due to a simulation error....
check your harmonics of your frequency. Also different ports give you different results
