Right now I am studying GRAVSOFT for geoid modeling to use it in my thesis, I tried to read the manual but it was not explaining the GUI Python version (it is explaining the Fortran version), so that I am still confused to understand the software clearly. I would like to understand clearly which data I have to use for determination geoid modeling and the steps (step by step) of doing that using GRAVSOFT programs.
please provide me any documents or any files that can let me understand all the programs inside the GRAVSOFT interface specifically for creating geoid modeling.

Almost all their tutorials are for the Fortran version, you can wait for them to update the tutorials, or you can choose a different UI to work with, python has MANY options.
My advice is to find a different Python modeling tool with better support from its community

I am not aware of a step-by-step tutorial for the python version of Gravsoft. I would recommend you (as Ahmed Zaki said) to read the full manual given for Gravsoft and try to run the whole New Mexico geoid determination case. Unfortunately, I don't have any notes regarding the py version.
Although, I recommend the following:
1. Try to keep some step-by-step notes of your own as (possibly) you will have to execute many trials in order to avoid errors in your input arguments (don't get disappointed during this phase).
2. Pay special attention to the format of the files in Gravsoft (station and grid files). They are described in the manual. There is also a routine that interprets between Gravsoft and GMT grid formats (in this case ASCII file with rows of lon, lat, value formats) that will be possibly useful if you need to create images/graphs of your results with other software.
3. You can run the NM case with the FORTRAN routines and the input arguments as provided in the manual OR you can put some effort into filling the corresponding input in the GUI of py Gravsoft. The steps are the same and you'll have to take care of the input grids/files/arguments in each step.
In any case, studying the theory and then the example in the manual will let you understand the meaning of the arguments and the technique (especially the residual terrain modeling). This is crucial as in case you will need to compute a new geoid you will have to test variations in the arguments (RTM ranges, grid-cell size/resolution, plate thickness, etc).
If you are fully aware of the geoid determination theory and have some experience with the generic mapping tools (GMT) suite, you can try its modules (like grdfft and gravfft). I find them preferable as they are much faster and potent with big dimension grids.
Be persistent and patient and you'll get rewarded.
