I think it can be stored by giving O3 (ozone- passing ozone gas through coconut water) treatment to coconut water.

If vacuum and ascorbic acid prevent browning then it's due to oxidation. If that doesn't work there are other options.

Can we do aseptic packing..what we do in case Mandarin juices..
