Insects are innovative food sources but little is know about the potential negative effects of chitin.
I would like to quantify chitinases activity in fish but I do not get to understand how. A couple of papers (https://doi.org/10.1016/j.aquaculture.2010.03.010, https://doi.org/10.1016/j.cbpb.2004.09.020) developed their own protocol but I do not understand them in a way to be able to replicate them.
Any help?
