I want to plot numerical results with the analytical solution for an arbitrary solver. I think the software Gnuplot can be used with a script whose name is plot.sh.
What is the structure of this script and how can I write it for the OpenFOAM results?
From your question, It sounds you want to fit an analytical function to your data points using gnuplot. If so, you need to use fit command. Here is an example of script you can write to do this for a simple 1D data set using the quadratic function f(x)=a*x**2 + b*x + c with three fitting parameters a, b and c:
f(x) = a*x**2 + b*x + c fit f(x) 'your_data' using 1:2 via a, b, c

This is an alternative way to visualize your results. You can extract your results into a .csv file using ParaView. Just create a spreadsheet view of your selected data source and save it with the .csv extension, then you can plot both the analytical and simulation results using the software of your choice.
I am not sure what you want to do, but Jose Lorenzo Alejandro Barba option works well to extract all the data from your simulation and manage it using any other program.
On the other hand, I found that Tecplot is quite versatile (and more elegant than ParaView) for most of the OpenFOAM graphic edition and postprocessing of results. You just have to open your simulation by opening Tecplot and on the upper menu go to File
> Load Data. Once in the directory menu, go to the system folder inside the OF case you want to plot and open the "controlDir" file. Tecplot will plot your simulation domain with the results (similar to paraView) and the different features that the program has will potentially allow you to do what you want to do.
