I am in need of measuring how far farmers adopt for new technology (greenhouse automation solution). Most of the literature on this matter is with two samples; one sample using the new technology and other do not. But I want to measure the level of technology adoption using the sample that only use the new technology.

Yes, it is possible. It depends on what technology you are trying measure .. let's assume, students accessing the same LMS system at the university.
This is one system and there is no new/old versions or different versions for different users, etc. Hope it is clear.

You can ask them how likely that they will be using the technology. Some will be very likely and some will be very unlikely. As a result, you can run all types of regression analyses. Please see:

You can use the Non-parametric test as well to measure the level of technology adoption. In Wilcoxon signed-rank test, you could come up with the conclusion by comparing the p-value and mean of each statement you developed for adoption level in sample.
in this context can you use the Estimates/coefficients of an OLS regression to determine the grade of adoption?
