I feel sonication can serve the purpose better. The cavitation and subsequent bubble collapse effect can facilitate easy penetration of honey into the arils. This would also enable osmotic dehydration and improve the shelf life of the product.

Microwave might cause discolouration to the product due to the thermal effect.

You may conduct some preliminary studies to determine the percentage of honey to be added.
