but I want more advanced informations such as ages, sexe, professional situation (worker or jobless, student etc. ), frequented locations for a specific category of population. These data is important to understand what is the correlation between users profiles and these motions.

I recommend you to create a facebook app and share the link among users. Those kind of information you are looking for are important for facebook and you cannot access them publicly.
