I want to know how the detailed step-wise procedure to measure the ECC data from the far-field pattern. If the process needs to be conducted inside an anechoic chamber, collecting such a large amount of data for different orientations looks unfeasible.

So there's a bit of a contradiction in your statement "experimentally calculate". Generally, envelope correlation coefficient (ECC) is a calculation performed as a normalized dot product between two (usually vector) antenna patterns and an incident field model. The patterns can be obtained from any vector antenna pattern measurement, but the critical part there is to have the relative phase information between the two antennas so that the spatial offset is reflected. A scalar pattern would only give you gain information and thus the ECC calculation wouldn't really reflect decorrelation due to antenna separation. It would only reflect relative pattern shape. The field model is typically scalar, and commonly chosen to just be 1 (an isotropic environment). A more complicated model simply weights the corresponding directions in the pattern for how much they matter to the ECC. In reality the spatial environment would contain phase information too, but that complexity is generally ignored.
So any any rate, the normal process is to measure the antenna patterns of a device under test (DUT) with multiple antennas by fixing it in the test volume and measuring the passive vector antenna pattern of each antenna in turn with the other(s) terminated. It's critical that the device position and form factor does not change between each test. Any shift in position on the positioning system will change the phase relationship and alter the ECC. Anything that alters the radiation pattern from what it will be when both antennas are active simultaneously will also alter the ECC.
Of course ECC can also be calculated at a design phase from modeled antenna pattern information.
