Dormancy depends of the unfavourable conditions faced by a bacterium. this is a state of a bacterium in which bacterium remain metabolically inactive. Dormancy can be increased by increasing its unfavourable conditions like temperature, nutrient, antibiotic treatment. etc..
It is a poorly asked question. If you are trying to produce probiotics, it is now dormancy you would expect, it would be stability of the formulation what you want to have. You would find your answer if you go through the literature and search for the formulations and stability of your bacteria of interest.
@Khem Raj Meena - can you please explain, how would you induce stability or in your words dormancy by the unfavourable conditions if you want to produce a probiotic formulation ?
