I would try to use an analytical STEM. For a direct observation of the chemical or even structural change.

your suggestion gave me a new idea to understand the response of my catalyst towards the CO2 reduction reaction. I really have no idea about how analytical STEM can be used for stability test in CO2 conversion. i hope this is tool to analyse the structural change due to catalysis, as you say. If i get some electrochemical tool to understand the cyclic stability, it will be much useful at this moment. i am thankfully considering your idea.

wie use our STEM to see structural changes and chemical changes un one step. Electrochemical tools give idea that stability is not given but what really happens with the material is not indicated. Therefore the combination of electrochemical observation and high resolution STEM is very usefule to follow the mechanism of degradation.

May be one of the easiest way in limited infrastructure is to utilize the CV (several cycles 100-500 cy) and look at response. - Viz. Tungsten Carbide Microsphere as a Noble Metal Economic Electrocatalyst for Methanol Oxidation,

The poisoning of the cathode can be due not only to the produced CO but to the electrodeposition of various metals on the cathode during the electrolysis/ or to the slow diffusion of relatively high molecular weight organics. You can measure in the cyclic voltammogram the current of CO2 reduction. The decrease in the current corresponds to the decrease of the active area due to the poisonig.
