Hello everybody, I am developing plant-based milk beverage, which currently has pH of 6.2. I want to package it into the can, but the manufacturers refuse to package it due to the high pH.
We tried to use Glucono delta-lactone to lower the pH, but found that it curdles the plant-based milk. All other acidifiers significantly affect the taste profile.
Could you please give me suggestion on this matter or offer the can packaging technology which potentially could deal with high pH? Thank you very much for your attention.
