I want to know how to create MONTHLY gridded data set based on point-based observational data (synoptic stations) for the rainfall and temperature.
I was read some article about creating DAILY gridded data set based on point-based observational data (synoptic stations), is this the same? or MONTHLY make a difference?

Yes and no. It would actually be interesting to compare the results using the two approaches that I outline below.
The first approach is to create your monthly data set for each station from the daily records (simply adding up the daily precipitation values for each month). Then interpolate your grid from the new monthly station values, just as you would interpolate the daily values to a grid. I would consider this to be the more standard approach.
The second approach would be to interpolate daily grids for all days in your data set and then sum up the daily grids for each month to create your monthly grid. Given the mathematics behind the various interpolation schemes available in most GIS software, it would be interesting to compare the results using these two approaches with various interpolation methods.
You can use ArcGIS interpolation method tools to create gridded data, and you can change to nc format.

Thank you for answering my question. I choose your first abovementioned approach. I have monthly data in 200 synoptic stations so according to your answer I interpolate to creating gridded data set from these stations.

I want to use Matlab because I want to compare the gridded data set that I create from the synoptic station using the approach that Dr. Matthew Mabey mentioned with GPCC (global gridded precipitation data sets) and CRU gridded data set.
