Does somebody know a different method to convert xyz files to ascii format except using the GridBatch software? I have 29 xyz files (each one is at least 120 MB so, I couldn't convert them using GridBatch software as there were an error for the files sizes). I changed their format to CSV and made them smaller. Then I imported them in GIS as a shape file and then converted them to raster but the issue is: there is not z value for them and I can not see the rang of different elevation in different color. Is somebody able to help me with that?

I might be able to help but need a little more information. In what format are your original files (binary, plain text -> if the latter put a bit of it here so we can see the format)?
The CSV you've created (CSV should be already ASCII) has all information you need? (if so than it will be very easy to parse that format into another plain-text format).

When you convert from shape file or csv to raster, you can specify that the z values to be used as pixel values. Depends on which tools you used for the conversion, you may have to specify it.
GRASS GIS 7.0 can do the job using the r.in.xyz (http://grass.osgeo.org/grass70/manuals/r.in.xyz.html) module. As you have multiple files of bigger sizes, it will be easier to implement with grass commands in a small script.
