I can not remember well, but I recalled that there is a formula to calculate theoretically the voids volume, hence the porosity, in a bed filled with a material of a known size.
My specific question will be how can I theoretically calculate how much water volume will be in a 1 m3 of a bed filled with lava rocks with an average diameter of 8 - 16mm?

Without the number of pores in your sample, you cannot calculate the volume of water in a porous sample.

Even if you consider your lava rocks to be impermeable smooth spheres, the distribution of the sizes will not allow you to calculate it based on packing of the rocks
