I have rainfall data, evapotranspiration data, DEM, Soil data, landsat images, can any one tell me how to calculate infiltration using the above data, or any other method please?

I think you need more data on the run off to complete the equation. ArcGIS can do the job. You also need to convert all the vector data into raster. It is a long process, so you need to look at previous studies in this field.
I would say you have to move away from remote sensing and GIS into the world of hydrological modelling. GIS can do some of the work and can be linked to may hydro models i would take a look at the http://www.hec.usace.army.mil/ website.
