I am using ultrasonication to enhance penetration of an antioxidant solution on potato.

The fact is that I found that, to calculate power density, I have the following equation:

P = m · Ct · (dT/dt),

BUT in all the publications I've read, mass is referred to a liquid matrix and the authors use a US probe.

In my case, I have an US BATH, where I put a pot with the antioxidant solution and the sliced potatos.

I wonder if someone could explain me which data should I obtain in order to calculate power density: if Temperature increase (dT/dt) is from the matrix (potato) or the liquid (antiox solution)...., and consequently which volume and specific calor (Ct) should I consider.
