Our department wishes to make website/ posters/presentations on the papers we have written and got published in reputed journals. Now, since most of the publishers ask us to transfer the copyrights to themselves, how one can avoid legal complicacies?

Denis is correct, you need a dedicated organiser. They should focus on contacting copyright holders to find out what they allow, and get their agreement on ways forward. Your organiser must have access to legal advice.
Don't focuse only on what the publishers will/will not allow. If your poster sells an article they own, that's to their benefit. Tell any waverers that!
It sounds like a good idea given the sorry state of academic publishing these days.
