We are designing a plasmid that will carry our insert SOS1 gene (homo sapiens) and the final length is longer than the company can generate. That's why we would like to shorten it by removing nucleotides between SP6 and the insert DNA (SOS1). That's why we are interested what is the minimum length (bp) we should keep in between?

I'd recommend that you ask the company. They probably have seen similar requests. Maybe you could remove a selectable marker or other region that you won't need for your project.
