You can use Extract by Mask tool. The polygon used cannot have have more than 1000 vertices. The output would be a Geodatabase raster as shown in

I always use ext. by mask but as I said, the issue is difference in scales of rasters.

actually... I extracted the intended area from soil type, but when I want to do same for dem raster, its not working...

Dear researcher,

You may attempt --> Ensure that both of the raster files are geo-referenced and assigned with same projection system.

As soon it is done, you will need to create a shape file having your AoI using which you can clip from both the raster images.
