Not sure about bone cutting, but in bone remodelling you typically assign an elastic modulus based on the apparent bone density or HU values from CT scans. The bone is a continuum rather than a porous structure. This can be done using subroutine USDFLD.

I have done the hard tissue section AND Mcneal staining. I think it's OK for bone tissue.
