You can determine the amount of chromium adsorbed by digesting the eggshell with nitric acid, and then subject your digested solution to ICP-MS.

You can also investigate the coordination environment by XAFS, so that you will know if how chromium is adsorbed on eggshell.

Are you using calcined eggshell or natural eggshell?

It generally has to be calcined first to activate it.
