may I ask you what will be the difference between vegan´s and commercial cookies? Different composition or different technology of processing? I am interesting in that kind of reaserch. Kind regards. Libor
Dear Arcelli & Libor, a partial response below is limited to our experience w/in the North American market:
The term "vegan" when used to create & market retail food products; whether bakery or other RTE/convenience items, excludes the use of any & all ingredients derived from animal sources and specifically including dairy. Further, the use of "pantry-friendly" (aka clean labels) ingredients will go hand-in-hand w/in this product-space....... of "natural" or minimally refined foods. In consequence, the use of polyols or refined and/or synthetically-derived fibers are incompatible w/in these sectors......regards....Roberto
