If I understand your question, in order to normalize (scaling) your image between two values a and b, you can proceed as follow :

I=imread('img.bmp');

[c l]=size(I);

b=c*l;

a=0;

max=max(I(:));

min=min(I(:));

newImg=(b-a)*(I-min)/(max-min)+a;

where max and min are the maximum and minimum values in the image I.

Do you want to Normalize the image pixel intensities or just want to reshape the image to a row vector of 1*2500 pixels..?

If you want to normalize the intensity values you can use the mat2gray() or im2double() functions in Matlab. And if you want to reshape the image to a row vector you can use the reshape() Matlab function.
