We use the temperature guns a great deal for undergraduate teaching due to the low consumable costs and ease of measurement. Though this tends to be alongside gold standard methods. I would have serious concerns with their use for research purposes in terms of validity and reliability. They tend to be effected by environment, sweat and measurement location. Skin measurement tends to be reasonable, but core measures (estimates) are usually far from that measured using rectal or oesophageal.
