I am very interested in specific activities and/or techniques to use with higher education students to enhance their levels of curiosity. Has anyone done research into how teachers promote curiosity in their students? If so, please share!
Curiosity seems to be something that needs to be 'nurtured' rather than 'taught'....
In any case. We have shown that a particular approach to teaching research increases students' inquisitiveness. This might be transferable to your situation?

Through experimentation and testing and applying/performing a variety of education and learning styles that enhance curiosity and ambition to learn, such as problem-based learning, inquiry-based learning, and project-based learning.
Recently, CBS demonstrated that the human brain creates centers of neurologic activity in a report on treating PTSD physically rather than psychologically. This concept has been in theory for many factors for many years through such studies as Dr. Judee Burgoon's Expectation Violation Theory structure and my own research on the effects of high stress on personality. The brain creates pRNA neuro-factories strongly linked to emotion. The stronger and more directly the emotion is linked to the behavior, the easier it is for that behavior to be recalled automatically by the individual. Freud knew this as did many others. Thus, creating an environment were strong, positive and joyful emotions are linked consistently to the desired behavior (curiosity) will create the desired effect. However, this is also a two-edged sword...it must be used intelligently and carefully.
