in respect to exoplanets, spectroscopy is the most important tool. Bodies within our own Solar System, of course, can also be studied with probes, landers etc. - so the methodological tool box is far greater there. Which planets or moons specifically do you have in mind?

I'm interested in Jupiter's moon Europa.

I would like to understand how the composition is predicted.

Nowadays, some research suggests that this moon probably has a subsurface ocean. It was possible to predict the composition of this ocean? Is it salty? Does it have arsenic, for example?
