Sounds like your material may be harder than the mortar. One method I've always liked is using a liquid carrier, I work mostly with inorganics so acetone is a perfectly non-reactive carrier, mix it around with stuck product and the pestle and then poor out the slurry. if you are using organics, maybe DI or other ionic solutions.

it depends on the material you are grinding. but you can follow Antonio's suggestion

Try using a sheet of paper to scrape the material off the sides of the mortar. Using the edge slide it down the sides of the mortar as if trying to get under the powder. Can usually get most of the material off, but some will always be left in there. I usually use a post-it note of the right size (experiment to get right size for your mortar). You can then use the same sheet to transfer the powder from the mortar to your reaction container or vial.
