If you read the book on Google or find articles on this model in Google Scholar you will find out how different epistemological perspectives are identified within an ontological research question. This model can be applied to the medical industry, educational arena, and corporate business platform.

One statistical approach would be to get the standard deviation of their grades, test scores or whatever you wanted and see the students who were within one standard deviation of the mean.   Repeat the same process six weeks later, nine weeks, etc.  Check specific student's z-scores by name again.  This would be one way to check student placement.  Of course, you could do other statistics tests too like pre- and post-test scores and check for statistical differences in scores.  However, what I have noted first would be quick way to get some statistical information.

Sustainability is measured by the effectiveness and innovativeness of the curriculum. The effectiveness measures the alignment of the methodology, instruction, strategies, activities,  teaching and learning to achieve desired educational goals. While,  innovativeness of the curriculum measure the social efficiency of the said sub-variables to the needs of the stakeholders. This research can be done using mixed method of research. Social efficiency Theory (Bobbit) and Logic Model can best measure theoretical grounds for the topic.

I think your question is:

How can we evaluate if sustainability is advocated and embedded in an educational curriculum?

In case you want to develop curricula with these important features, i think you can take as a departing point Budapest declaration (1999) for science and technology education, together with OEI recommendations.  

If there is a curriculum yet and you want to analyze it to see if sustainability is present, you can use validated evaluation instruments to do so. I could see José M. Cardeñoso has recommended a paper about this topic.

On the other hand, OEI standards for sustainability can be useful to you for validation instrument design. You can validate it for validity and liability, then use it. Watch outcomes and decide answering your initial question.

Secondly I'm looking at how students take it in. What is the effect of sustainability component on students? Hence the word imbibe.

Following was the research design:

• 3 tourism and hospitality programs were studied (Undergraduate Level).
• Ontological position: Subjective Reality
• Epistemological position: Pragmatism paradigm
• Methodology: Mixed Methods followed by Sequential Explanatory Design (Triangulation)

Method:

1) Survey: (Tool - Questionnaire)

A total of 103 students from these programs were selected based on purposive (Homogeneous)  sampling. Ensured having higher number from the final year, then second and lastly first year.

2) Semi-structure interviews: (Thematic Analysis)

All faculty members of the concerned school. Total population sampling

3) Content Analysis: All courses/Units of the concerned programmes 

Based on Blooms Taxonomy

Results / Findings:

• Sustainability was a major component in the programmes.
• Students Affective domain was affected through the programmes
• Emergent themes - advocated sustainability to be holistic in approach and not focused on one discipline
• Teaching pedagogy: Most effective -  Hands on / Practical Approach - with student centered focus. Tools used: Live projects, CSR activities, field trips, Industrial Attachment.
