If someone does not have sufficient money to pay bills then clearly it will create terrible stress. Unfortunate circumstances are not simply down to bad life decisions, as money does not necessarily gravitate to those who do, and certainly does not distinguish between the good and bad.
There are billionaires without a college education. I don't know of a single billionaire who has a PhD! Needless to say, wealth doesn't necessarily buys happiness but it is good to have.
I doubt if anyone knows the answer but happiness research finds no correlation between wealth and happiness except when income falls below the poverty line - where families struggle to feed, clothe, or get medicine for themselves or their children. Which probably means no correlation with stress levels except in the very poor. So in most people I would expect no gross anatomical differences associated with income, though education must create differences (such as expanded hippocampus in London cab drivers cause by acquiring "the knowledge").
Brain development depends crucially on dietary lipids - even in modern cities with supermarket food supplies, the dry weight of a mother's brain can fall by 10% during pregnancy and breast feeding because the baby's brain growth is stealing those lipids. Malnutrition, like gross neglect, could lead to impaired brain growth in infancy.

There is a relationship between a person's income and brain. People with a better income tend to have more piece of mind. However, people with low income live under a lot of stress and social pressure. There is a famous quotation about poverty which I believe is absolutely true, "Poverty is the worst form or Violence."
