Start with a research question which can then be interpreted into a hypothesis involving different variables. The appropriate test will then depend upon the way the variables are combined together. A common test is a 2-way chi-squared test. The online sources of information I would recommend are the statstutor.ac.uk guides and the CAST e-books at Massey University.

In case your hypothesis is for T-test like "The means of two variables show a variance",then a T-test will test the hypothesis.
In case the hypothesis is a relation of two variables,then a correlation test will test the hypothesis.These two are bivariate analysis.
In case there are more than two variables then one could use Regression or SEM
