For example, you can add "To workspace" block in simulink, calculate desired values and draw characteristics after simulation. You can do it in one m-file including executing the simulation.

You can use the scoop bloc in Simulink, or you can send your results to m-file or workspace and then plot them using MATLAB plot

your reference signal and response signal of system  that you obtained via your controller should be passed throug a Mux block then connect output of mux to a scope

then you can observe both reference and system response where you can identify the settling and rise  time and also overshoot
