You can test the antioxidant activity of "antioxidant agents" in meat and meat products, with TBARS, PV and... assays for measuring the lipid oxidation. For measuring the protein oxidation you can apply the Total carbonyl test.
first you have to extract the lipids from fish meat which you want to assay , extraction will by organic solvents, then you must made PV test and TBA test, and free fatty acid test.
