Model testing was conducted and we have measurements which varies with time of course such as (speed vs time), (motor current vs time), (force vs time), etc.
I just want to measure the accuracy of the used sensors? How can I do that please?
Can I use Fourier transform ? how ?

Accuracy has nothing to do with time.
A characteristic associated with time is the stability, i.e. time variation of the parameter, provided that all the influencing factors are stable.
An interesting topic for us a s well. If you want to encalculate the efficiency of an electric motor you have to calculate the imput power by cuurent and voltage and the output power by torque and speed. If measurements vary with time, you have to handle.
Is this a timed measurement or are you looking for the most accurate measurement? i.e. Do you need to know the reading at a specific time? It is normal in electronics and calibration for accuracy to increase over time. So a measurement taken at 40 seconds would be out of tolerance, while a measurement taken at 4 hours would frequently be in tolerance.
If this is a timed measurement, you might need to adjust so the reading rapidly approaches the desired value. The downside is that a measurement that is in at 40 seconds will be out at 4 hours, unless a secondary device is also monitoring and adjusting the unit under test. Some devices have a ramp up period, while some provide (more or less) instantaneous readings. Temperature (or current) vs voltage (or frequency). Regardless, the longer you take for a reading takes, the higher the likelihood of more accurate and precise, repeatable readings.
