Also, use 3D Slicer with the MatlabBridge extension, just install the SlicerRT extension and load the Dicom image data in the slicer and run your Matlab function directly from Slicer.

I guess you have to export png, tif, jpg, etc.. from dicom files before you start your work on medical images.

if you will ask about how you can extract the images from dicom files, you have many options; you can write a block of code to do that, or you can use one of ready tools that are doing that.

Though I use python and there is a library called "pydicom" with that we read the images. I'm not sure but there must be some predefined functions available in Matlab as well but if there is no such function available then I would suggest you a plug-in method i.e. to read the dicom images in python and save it in .jpeg or other format and then use those .jpeg in Matlab.
