I am trying to calculate Euclidean distance from roads for the island of Pemba. However, it seems the shapefile cuts off the data right after the displayed road and I end up with a raster layer that cuts off half of the extent of the map. I am wondering how I might be able to correct for this? I am preparing the files in ArcMap but this is how it presents in TerrSet...

I noticed a remark that resembles your situation it says :
When using polygon feature data for the input source data, care must be taken with how the output cell size is handled when it is coarse, relative to the detail present in the input. The internal rasterization process employs the same default Cell assignment type method as the Polygon to Raster tool, which is CELL_CENTER. This means that data not located at the center of the cell will not be included in the intermediate rasterized source output, and so will not be represented in the distance calculations.
You may constitute an imputation strategy to replace missing values. For this, you have a wide range of univariate/multivariate statistical and machine learning alternatives. For practical examining of these, you may refer to R packages such as "accelmissing", "ForImp", "imputeMissings", "missRanger", and "VIM".
