In Mamac website (http://www.mamacsys.com/pdf/Pressure-Sensor-PR274-275.pdf) it says this is a linear sensor. So you should be able to easily map voltage range onto pressure range. Nevertheless, simple testing (perhaps by water column) will help you confirm the relationship.

You should be able to divide the full scale measurement range by the full scale output voltage and get a value of Pa per Volt. In your case,-937.5 to +937.5 = 1875. Now you can take 1875Pa/5V = 375Pa/V or .375Pa/mV. Next, you need to figure out which method you'll use to display the value.

Let's say you have a bare meter movement that you want to use to display your pressure. You'll need to know the full scale deflection current of the meter and use the proper scaling resistor to get 5V to give you full deflection. Now you can create a scale for the meter using your full scale measurement range from the sensor and the meter will show you the pressure reading directly.

Let's say you have a DMM with a mV range and you want to make each mV = 1Pa. Then you need to scale the sensor output to give you the right voltage 1Pa/mV instead of .375Pa/mV which can be done with a properly sized resistor network. Maybe a 2.66k and a 1K in series and read the voltage across the 1K resistor.

But let's say you have a microcontroller with an analog input, like an Arduino. Then you just need to hook up your analog output from the sensor to the analog input of the microcontroller and map the input voltage to the full scale measurement range of the sensor. If you are using a controller with 10-bit analog inputs and 0-5V input range, you'll get roughly 5mA reading increments in 1024 discrete steps up to the 5V max input. Then you will map a signed integer from -937 to +937 to the bit range of 0 to 1024. Now you can send the reading in Pa directly to your computer using the USB port.
