I think, Zn-Al-Cu ternary phase diagram is probably appropriate to understand the phase formation and oxidation behaviour. There are several literature available on the topic. For example:

I think you may find values for these quantities in NPL's MTDATA software, probably in their MTOX/MTSOL databases, (or the SGTE databases, SGSOL). FACTSAGE may also have values for these quantities, in its databases.
Classically one measures the partial pressure in the vapour above the melt. I expect that the method is far easier said than done though. I have vague memories that the quantities can also be derived through electro-chemical techniques.
