To answer this question, more details should be mentioned such as: are the samples from the same patient before and after treatment? are you going to compare between two groups of patients or more? do you have any time-related measurements? etc. These information are important to identify your independent variables, and then your null hypothesis which eventually can lead you to know the test suitable for your data.
The chi-square test can be applied basically to see whether the haemoglobin or TSH distribution is different between say males and females. A significant chi-square will only indicate that the distribution between males and females is different. Having established the significant differences, compare the proportions of normal or abnormal status among males and females. Say, males are showing higher proportion of normal Hb level implies that anemia problem is more common among females compared to males.
