You have probably used the Folin-Ciocalteu assay in your measurements. This assay is NOT SELECTIVE towards polyphenols. Ascorbic acid is the main antioxidant in blood serum and reacts with Folin-Ciocalteu. I'm pretty sure that you measure the total antioxidant content, but not polyphenols.
