I have the following data sets showing the surrounding temperature change over time. I want to find the appropriate function that could predict the change of surrounding temperature when the initial measured surrounding temperature changes.
Please give me suggestions on the suitable method to find the function that fits the attached data.
I have also attached the ambient temperature versus time curve as PNG file.

It depends a little a bit on how accurate you want your fitting function to be:
- you could use polynomial fit, taking as its polynomial the degree maximally the "number of data points - 1". This will give you an very accurate function, but will be computationally tedious
- If you want to get a more qualitative fit (seeing your data you could say that the third peak of your time series is an outliner etc.), you can fit the sum of three or four sinus functions, fitting their amplitude, phase shift, periodicity,...)
