I want to understand how they feel, what are the triggers, coping mechanisms, responses (emotional, physical, cognitive), impacts, etc.

As a mental health practitioner and researcher, here are some recommendations for you:For qualitative research, bracketing your personal bias, expectation, and knowledge are one of the fundamental principles. Forget about your data analysis first. Data analysis largely depends on the research design whereas the research design relies on the research objectives or the research questions. As far I have understood, you have not decided on your research design till now.
Here is an example. Please do not consider this example as a solution to your question. It is just for your understanding. If your research objectives or questions demand to employ phenomenological research design, you need to determine what type of phenomenological research design will be the best and the most suitable design for you. Specific phenomenological design (e.g., descriptive, hermeneutic) will guide you to recruit participants, data collection and analysis procedures.
Now, here is the data analysis part, qualitative research offers you a very flexible data analysis technique. For phenomenological purposes, you can apply specific data analysis techniques such as Moustakas’ modification approach, van Manen, or even thematic data analysis. You just need to provide justification against your selected data analysis technique.

You can justify the Giorgi data analysis method in several ways. For example, this data analysis method follows the core principles of descriptive phenomenological research design. It aims to reveal and understand the lived experience through providing rich description. In addition, this data analysis method has a systematic and well-organized step to analyze descriptive phenomenological research. Moreover, it employs some techniques to establish the rigor and trustworthiness of your research. For instance, practice reflexivity and bracketing, and member checking are two techniques that are widely used techniques to achieve rigor and trustworthiness of qualitative inquiry.However, justification will be based on what do you want to explore. Here, you need to provide citations. The above-mentioned points I have provided are based on definitions and basic assumptions of the Giorgi data analysis method. It is completely all right to ask your supervisor to provide you with some articles related to Giorgi method (thesis dissertation is the best option because you will get detailed explanation of data analysis techniques) from where you can learn it. Read some articles. Gradually you will develop insight.
