We want to assess teaching stress and intonation for university students.
We have selected ( pre-test and post test , teacher observation/interview , student questionnaire )
Do you think these are the right tools or what other recommendations and advices you have?
Consider conducting test and post-test may be valid, however, rather than conducting static tests, I'd bet on a more personalized and dynamic work. They can provide valuable information, appreciative interviews, reflective dialogues and especially dynamic tests with establishing different levels of support, so that it is useful to participants, as true subjects of this evaluation.
The formative assessment strategies such as observations and student reactions to the topics in the specific module are good. These would help to show that the module content and learning activities were mostly responsible for the learning outcomes being achieved and no other external phenomena.

The other thing you could do is to video-tape the lessons so the teachers can evaluate their own performance afterwards. This has a great impact on people.

I think that Carolina is correct in having students video-tape the lessons. What are you using as a measure for stress? There is some new research on stress. If I can remember the citation, I will send it to you.
Maybe learning logs/ journals can be added to your list of assessment tools. At the beginning of each session, you can pose specific questions on the topic to be covered and give students time to respond to same (in their logs/ journals) at the end of the session.
For formative assessments, besides those suggested above, you may also consider using rubrics so that both teachers and students have common understanding of the standards/quality of work expected. Hope it helps.
In my experience, assess stress in students is interesting, but it is more lower those stress levels. Keep in mind that the evaluation conceived in the traditional way is stressful by nature, especially the effects of negative resonance generated in students, which are evident in the decline in self-esteem, elevated levels of anxiety and frustration . Have students evaluation are true subjects and not mere objects, they see evaluation as a learning opportunity, it is very favorable. However, a way to appreciate and decrease stress levels is "evaluating" the rate of student satisfaction in relation to the activity being performed,
