Both fenchone and camphor are volatile aromatic components of the essential oil of the test plant. Essential oil yield from an aromatic plant and its chemical composition are influenced by several factors. There are generally 2 ways: If you have the plant material, isolate the essential oil at a specific growth stage (say flowering) either by hydro-distillation or by other methods (solvent extraction, super critical fluid extraction, microwave assisted extraction, simultaneous distillation and extraction etc). Examine the essential oil composition by GC-FID and GC-MS. Whatever is the major component in your sample, you can use either the essential oil as a whole or its fractions or pure compounds (purchased from the market or produced in your lab. from your sample).
The second way is to purchase the essential oil available in the market and work with it.
Many chemotypes have been reported in several aromatic crops. It is possible that the plant exists at least in 2 chemotypes, fenchone and camphor rich. You can test both the types. You can check the known biological activities of these 2 compounds in Dr. Duke's phytochemical database before you test these compounds.
Other Lavandula species have been extensively researched and several publications can be found on the internet.

I will use extract of lavandula, not oil. I will use its extract to see its possible effect of rat epilepsy. I have read many articles about lavandula and its extract composition. İts profile is changing from article to article. Camphor in some articles, fenchone in somes, pinene in somes. I will use main substance or substances (camphor, fenchone) to define effect on epilesi while ı am testing lavandula extract that is why ı am asking the main substance.

Essential oil is the volatile portion of the test plant and can be isolated by distillation and other techniques. All the 3 chemicals mentioned by you are volatile aroma compounds commonly found in essential oils.
Extracts are generally obtained by solvent extraction. Extracts of aromatic plants contain both volatile and non-volatile phytochemicals (alkaloids, phenolics, sapogenins, coumarins etc. I am sure you know these things). Extractions are generally carried out with solvents of increasing polarity. There are several threads on the subject in RG. Depending on the solvents and extraction times/techniques compositions of the extracts vary.
Since your literature showed differences in main compounds all of which are aroma chemicals, essential oil appears to be the dominating substance in the extracts.
Your interest basically appears to be the plant. I suggest that you can use the powder or fresh material of the plant for your feeding experiments along with the diet and observe the results.
In some of your experiments you can use both essential oil (if possible) and extract and observe the differences if any. Since extract contains both volatile and non-volatile chemicals, it may be more effective (at least theoretically).
Essential oil does not mix with water. But small quantities can be dissolved in cold or hot water. This water can then be used for drinking. If you collect distillation water it contains small amounts of dissolved oil components mostly water-soluble oxygenated polar compounds (you can see some of my papers on water-soluble essential oils).
As far as the main substance is concerned, if funds, facilities and time are not limitations you can use all the reported substances. They may change due to variety, season, country, chemotype, extraction method/time etc.
Well I can not give a direct answer whether you will get desired results or not because I have no experience with this species.

The variety in results can be the actual cultivar used (ie different groups of plants from different locations can have different levels of constituents) and it can vary depending on the soil it is grown in and the time of year harvested. Symbiotic microbes on the roots may vary this also.
