I am looking for information about using techniques other than typical surveying. I found publications about using airborne laser scanning, photogrammetry (also from UAV), but maybe there are some implemented solutions in program of monitoring of technical condition of levees. Links appreciated.

Do you mean leaves or levees?
If you mean leaves (where the stomates are located), this can be done by LIDAR as suggested in the first answer, or by taking photos. Check the results of recent measurements in the Amazon forest in this paper:

Levees means coastal line or river bank, in any monitoring changes requires very high resolution images of different date in some cases periods of 10-20 years will give out good results of change detection's the tools was there in Erdas imagine or Envi both are Remote sensing software's

I meant levees as hydrotechnic building nearby river channel. We conduct a project of using UAV equipped with ultralight laser scanner for monitoring of these object. We evaluate their geometry (change) using high resolution DTM ands orthophotomaps. I am looking for some materials related to this subject and I hope I can exchange some experience with others.
I think you are on the right track in terms of methodology. Will be interesting to see your findings.
